2 eggs, separated
1 tablespoon caster sugar
1/4 teaspoon vanilla extract
1 small pinch salt
1 tablespoon butter, softened
1 tablespoon apricot jam
1 tablespoon icing sugar

In a bowl, whisk the egg yolks with the sugar, vanilla extract and salt. Add half of the butter to the yolks and beat well. In a separate bowl, whisk the egg whites until stiff peaks form then fold into the egg yolk mixture. Fold in the apricot jam.
Melt the remainder of the butter in a saucepan and add the omelette to the pan. Cook for just a few minutes then pop under the grill for a minute or two to brown. Remove from the pan, transfer to a serving plate then dust with icing sugar. Serve immediately.
