Sweet apricot soufflé omelette

    This delightful sweet soufflé omelette is sweet, light and the perfect combination of flavours. Perfect for a Mother's day breakfast or other special occasion.

    Serves: 1 

    • 2 eggs, separated
    • 1 tablespoon caster sugar
    • 1/4 teaspoon vanilla extract
    • 1 small pinch salt
    • 1 tablespoon butter, softened
    • 1 tablespoon apricot jam
    • 1 tablespoon icing sugar

    1. In a bowl, whisk the egg yolks with the sugar, vanilla extract and salt. Add half of the butter to the yolks and beat well. In a separate bowl, whisk the egg whites until stiff peaks form then fold into the egg yolk mixture. Fold in the apricot jam.
    2. Melt the remainder of the butter in a saucepan and add the omelette to the pan. Cook for just a few minutes then pop under the grill for a minute or two to brown. Remove from the pan, transfer to a serving plate then dust with icing sugar. Serve immediately.
