About this recipe: This is a basic recipe for a savoury omelette. Feel free to add your favourite fillings such as mushrooms, cheese or even courgette.


Serves: 1 

  • 2 large eggs
  • salt and pepper, to taste
  • chopped fresh chives, to taste
  • 1 tablespoon butter
  • chopped ham, to taste

  1. In a bowl, whisk the eggs with the seasoning and chives. In a frying pan over a medium heat, melt the butter and pour in the egg mixture. Cook for a minute or two then loosen the edges with a fish slice and sprinkle on the ham. Using the fish slice, flip over the omelette to make a semi circle and cook to taste. Remove from the heat and serve immediately.
