These are basic, old fashioned flapjack biscuits that are quite different to what we enjoy today. Feel free to add some dried fruit if you like.

Makes: 15 flapjack biscuits
270g brown sugar
300g plain flour
2 tablespoons golden syrup
1/4 teaspoon bicarbonate of soda
340g rolled oats

Preheat the oven to 200 C / Gas 6. Line a baking tray with baking parchment.
Melt the butter in a saucepan and add the brown sugar, flour, syrup and bicarb. Thoroughly mix in the oats then transfer to the prepared baking tray in tablespoon sized mounds, then press down gently to form a biscuit about 2cm thick.
Bake in the oven for 15 minutes until golden brown. Remove from the oven, cool and cut into squares.
