About this recipe: This lovely chocolate fridge cake recipe has been in the family for many years. Easy to make and economical, it calls for cocoa powder and lots of crushed digestives.


Serves: 4 

  • 85g butter
  • 1 tablespoon golden syrup
  • 1 tablespoon caster sugar
  • 1 tablespoon cocoa powder
  • 1/2 teaspoon almond extract
  • 250g digestive biscuits, crushed

  1. Line a dish or pudding mould with a double layer of clingfilm.
  2. In a saucepan, melt the butter and add the syrup, sugar, cocoa powder and almond extract. Mix till smooth, then add the biscuits. Press the mixture into the prepared dish.
  3. Chill in the fridge for 2 hours, or until set. Remove using the clingfilm to help you and turn out onto a serving plate. Slice and serve.
