Plain vegetable stir fry

    Simple Thai style vegetable stir fry, wonderful served with a quick peanut sauce and rice. Look for peanut sauce recipes on this site.

    Serves: 2 

    • 5 mushrooms, sliced
    • 1 red pepper, sliced into strips
    • 1 carrot, sliced
    • 4 tablespoons finely chopped shallot or purple onion
    • 5 cloves garlic, finely chopped
    • 1 handful fresh Thai basil leaves
    • 2 tablespoons vegetable oil
    • fish sauce or soy sauce, to taste

    1. Add the mushrooms, red pepper, carrot, shallot, garlic and basil to a large wok or frying pan and place over medium heat. Add a bit of fish sauce or soy sauce.
    2. Add the oil and stir fry for 10 minutes, testing as you do. If it needs to be more salty, add more fish or soy sauce.
    3. Serve on rice with peanut sauce covering the stir fry.
