Bacon, lentil and tomato soup

    This gorgeous soup is a comfort food perfect for cold winter nights. It is quite cheap to make and it is very filling and certainly gives you your 5 a day. I defy you to not have seconds!

    Serves: 6 

    • 1 tablespoon olive oil
    • 200g back bacon, cut into bite size pieces
    • 1 onion, chopped
    • 1 to 2 large potatoes, chopped in small cubes
    • 2 sticks celery, finely chopped
    • 1 to 2 large carrots, diced
    • 2 garlic cloves, chopped
    • 1 teaspoon finely grated root ginger
    • 6 tomatoes, chopped
    • 130g dried red lentils
    • 900ml vegetable stock
    • 1 tablespoon curry powder
    • 1 small handful fresh coriander, chopped
    • salt and pepper to taste

    1. Add the oil to a large nonstick pan, heat over medium-high heat. Add the bacon and fry for around 5 minutes, or less if you prefer your bacon less crispy.
    2. Add the onion, potato, celery, carrot, garlic and ginger, and fry for a further 2 minutes.
    3. Add the remaining ingredients (except the coriander and seasoning) and bring to the boil. Cover and simmer gently for 20 minutes or until lentils and cooked and softened.
    4. Stir in the chopped coriander, season well and serve with crusty bread.

    Beautiful soup, great comfort food for winter. The ingredients make a huge pot full to freeze or have another day. Perfect!  -  19 Dec 2013
