Super easy slow cooker beef stew

About this recipe: This recipe is so easy! It requires probably about 10 minutes preparation at tops! Tastes INCREDIBLE. This recipe does not have any fancy ingredients and it does not cost a lot either! If you do try it please let me know what you thought.

Serves: 6 

  • 400g stewing beef (don't buy expensive meat, it's not necessary)
  • 2 large white onions
  • 1/2 bottle wine (any will do, white or red, cheap or expensive)
  • 1 (400g) tin chopped tomatoes
  • 1 teaspoon mustard grains (or a bit of mustard powder)
  • 2 beef OXO® cubes
  • 3 garlic cloves
  • 2 teaspoons garlic paste, or to taste
  • 3 to 4 large potatoes
  • beef gravy granules

  1. Fry the beef in a pan on a hot heat for a couple of minutes to get it nice and brown. When the beef sticks to the bottom it's great for the flavour. Transfer the beef into a slow cooker.
  2. Finely or loosely chop the onions and fry them in the pan until they go slightly brown. This should only take a minute or so! Transfer them to the slow cooker.
  3. Take the wine and pour it into the frying pan to deglaze and get off any of the onions. Transfer the wine to the slow cooker.
  4. Add the chopped tomatoes to the cooker (Napolina® is the best). Add mustard grains.
  5. Add two beef stock cubes. I guess you could use one but the extra flavour is great!
  6. Add in at least 2 teaspoons of garlic paste and 3 garlic cloves. If I am honest you can never have too much garlic so just go crazy. This is just the minimum I suggest!
  7. Rinse your potatoes under the tap and simply cut them up into chunks or slices, whatever you enjoy! Don't bother with peeling them, there is no point and this recipe is supposed to be easy!
  8. Stir everything together really well. Then top your slow cooker up with water so it is around 3/4 full. (If you have too much liquid you can always take the lid off for an hour or two to dry it out.)
  9. Cook for as long as your heart desires. I put mine on for 12 hours. Go to sleep! :)
  10. Thirty minutes before you want to serve it sprinkle in some beef gravy granules to thicken it to your liking.

just preparing this one for tomorrow evening - have fettled it a bit and added celery and carrots as I am on Slimming World and need to have loads of veg. Also, will be putting a load of button mushrooms in an hour or two before the end of the 12 hour cooking time - will let you know how it goes..... given it 5 stars in anticipation but may have to adjust after tasting but, again, will keep you updated - 18 Feb 2014
