Jacket potato with side salad

    A tasty mix of my fave things for tea one night. You can sub your favourite jacket potato fillings for this recipe in place of tuna and sweetcorn.

    Serves: 1 

    • 1 baking potato
    • 1 tin tuna flakes
    • 1 handful sweetcorn kernels
    • salad cream or mayo to bind tuna
    • your favourite salad greens
    • salad dressing, to taste

    1. Preheat oven to 200 C / 180 C fan / Gas 6. Rub baking potato under water to remove any dirt then take a sharp knife and carefully poke to potato all around with little holes.
    2. Place the potato on the shelf in the oven and leave cook for an hour.
    3. After an hour leave the potato in the oven while you complete the next steps. Drain the tuna and empty the dry contents into a bowl. Add the sweetcorn to the bowl also.
    4. Next gradually add salad cream or mayo to the bowl and stir, keep adding until reached your desired consistency, I like it quite bonded and thick!
    5. Next slice up your salad as you like it and place it on the side of the plate, place your favourite salad dressing on top.
    6. Now remove the potato from the oven, place it on the plate and carefully cut from side to side in a cross shape so the potato opens like a flower.
    7. Spoon in the tuna mix and serve!


    If you are using frozen sweetcorn place it in a bowl and run hot water over it for 2 minutes, the sweetcorn should be thawed but still chilled for your mix.
