Lovely oat biscuits

    These lovely oat biscuits have been in our family for years and we definately prefer them to shop bought. Great with a little smoked salmon or even covered in baked beans.

    Makes: 12 oat biscuits

    • 30g butter
    • 85g plain flour
    • 200g rolled oats
    • 55g brown sugar
    • 1/2 teaspoon bicarbonate of soda
    • 1 egg

    1. Preheat the oven to 170 C / Gas 3. Grease a baking tray or line with parchment.
    2. In a bowl, rub the butter into the flour and oats, then add the sugar and bicarb. Bind with an egg and mix till just combined. Turn out onto a floured surface and roll out to 1cm thickness. Cut into rounds using a biscuit cutter. Arrange on the prepared baking tray.
    3. Bake for 15 to 25 minutes until firm and beginning to turn golden at the edges. Remove from the oven and cool before serving.
