Chocolate cake without eggs

    Very easy to make, light and delicious. I vary the flavour by using mint or banana instead of vanilla extract.

    Makes: 1 (23cm) cake

    • 220g plain flour
    • 200g caster sugar
    • 40g cocoa powder
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 250ml water
    • 125ml oil
    • 2 teaspoons vanilla extract
    • 2 tablespoons vinegar

    Prep:10min  ›  Cook:25min  ›  Ready in:35min 

    1. Preheat oven to 170 C / Gas 3.
    2. Mix all dry ingredients in a bowl. Add the water, oil and vanilla and mix well. Finally, add the vinegar and mix. Tip into a greased 23cm round cake tin.
    3. Bake for 25 to 30 minutes.

    Sounds, good. I also tweaked it and used baking powder instead of bicarb, seems to make it lighter.  -  12 May 2014


    I used orange essence instead of vanilla, and iced with buttercream with some orange zest in. The result was a lovely light cake that tasted just like a chocolate orange!  -  09 May 2014
