Bara brith style bread

    This is our family recipe for a bara brith style bread. We have tweaked it a little to our taste, and eat it more as bread rather than a cake.

    Makes: 1 bara brith loaf

    • 225g plain flour
    • 1 pinch salt
    • 170g dried fruit
    • 280g soft brown sugar
    • 1 tablespoon caster sugar
    • 15g dried active baking yeast
    • 150ml warm water

    1. In a bowl, combine the flour, salt, fruit and brown sugar. In a separate bowl, combine the caster sugar, yeast and warm water and leave in a warm place for 30 minutes.
    2. Preheat the oven to 170 C / Gas 3. Grease a loaf tin and sprinkle some flour on the inside.
    3. Make a well in the dry ingredients then add the yeast mixture. Knead gently, then transfer to the prepared tin and leave in a warm place to rise for 1 hour.
    4. Bake in the preheated oven for 45 to 60 minutes until risen and golden brown. Remove from the oven and cool before serving.
