This recipe for cornflour cakes is a family recipe and has been in our family for a number of years. These cakes are light and great for afternoon tea.

25g margarine
55g caster sugar
1 egg
110g cornflour
55g plain flour
1 teaspoon baking powder
1 teaspoon vanilla extract

Preheat the oven to 200 C / Gas 6. Grease a shallow sponge tin and line with baking parchment.
In a bowl, beat together the margarine and sugar until light and fluffy. Add the egg then sift in the flours, baking powder and vanilla extract. Pour into the prepared tin.
Bake in the oven for 10 to 20 minutes until a skewer inserted into the centre comes out clean. Remove from the oven, cool and slice to serve.
