Wartime chocolate sponge cake

    During the second world war we had to make great economies in the kitchen and use whatever we had that was on hand and available. This is our family recipe for wartime chocolate sponge cake. It tastes very different to regular chocolate sponge, but if you are feeling adventurous give this a try!

    Ingredients
    Serves: 6 

    • 110g mashed potato
    • 2 tablespoons caster sugar
    • 85g butter
    • 1 egg
    • 1 tablespoon dried egg
    • 170g plain flour
    • 2 teaspoons baking powder
    • 1 teaspoon vanilla extract
    • 2 tablespoons water
    • 2 tablespoons cocoa powder
    • 2 to 3 tablespoons milk

    Method

    1. Preheat the oven to 190 C / Gas 5. Grease and line a cake tin.
    2. Cream together the potato, sugar and butter until smooth then add the whole and dried egg and beat for a few more minutes. Stir in the flour, baking powder and vanilla extract. Mix in the water, cocoa powder and milk. Pour into the prepared cake tin.
    3. Bake in the preheated oven for 30 to 40 minutes until a skewer inserted into the centre comes out clean. Remove from the oven and cool before serving.
