Slow cooker corned beef and bean stew

    Serves: 2 

    • 25g beef dripping
    • 1 leek, chopped
    • 55g plain flour
    • 725ml vegetable stock
    • 2 parsnips, peeled and chopped
    • 3 carrots, chopped
    • 200g diced corned beef
    • 1 (400g) tin kidney beans, drained
    • salt and pepper, to taste

    1. In a saucepan, melt the dripping and cook the leeks until soft. Add the flour and stir. Transfer to a slow cooker along with the remainder of the ingredients. Set the cooker to 4 hours on low. Spoon into a bowl and serve.
