During the war we had to make do with what we had and cream was a luxury that many had to go without. This is our family recipe for wartime mock cream.

Ingredients
Serves: 4
- 2 tablespoons dried milk powder
- 150ml water
- 1/2 teaspoon lemon juice
- 2 teaspoons caster sugar

- Blend the dried milk with the water and whisk together until thick and frothy adding a little lemon juice. When thick, fold in the sugar and use or serve.
