About this recipe: So in a moment of madness, I got organised and drew out a meal plan of healthy foods I could eat, and not feel the desire to use my own eyes as a jelly just to be rid of the monotonous sight of yet another green leaf. So after researching all the good things I should be eating, I went a looking. I don't claim this to be anything special at all, its really so I don't forget myself. Just a tuna sandwich with some good stuff thrown in, that will be masked by taste.
Use Greek yoghurt for a thicker texture, if desired. Use shop-bought guacamole, or I refer to this recipe as I use it throughout the week. You can spoon this into pitta bread, or have it as a dip and dip the pitta in.
