Quick pep to an old snack (or tuna sandwhich)

About this recipe: So in a moment of madness, I got organised and drew out a meal plan of healthy foods I could eat, and not feel the desire to use my own eyes as a jelly just to be rid of the monotonous sight of yet another green leaf. So after researching all the good things I should be eating, I went a looking. I don't claim this to be anything special at all, its really so I don't forget myself. Just a tuna sandwich with some good stuff thrown in, that will be masked by taste.

Serves: 1 

  • 1 can tuna in oil or water
  • 1 apple, cored and diced
  • 5 tablespoons low fat plain yoghurt
  • 1 tablespoon guacamole
  • lettuce leaves
  • whole grain or brown bread

  1. Fluff tuna with a fork in a medium mixing bowl. Add apple, yoghurt and guacamole. Stir to blend well.
  2. Place your lettuce on the bread, with whatever other trimmings you want, and spoon on the tuna mix.
  3. Eat on the go, or indulge as part of a snack you know is normal, and without any pretentious hard to do crap that makes you look like a rabbit.


Use Greek yoghurt for a thicker texture, if desired. Use shop-bought guacamole, or I refer to this recipe as I use it throughout the week. You can spoon this into pitta bread, or have it as a dip and dip the pitta in.
