King prawn curry

    One of my husband's favourites. Serve this prawn curry over rice. I have also made this with chicken, cooking slightly longer at stage two.

    Serves: 2 

    • 150ml water
    • 2 tablespoons desiccated coconut
    • 2 tablespoons plain flour
    • 1 tablespoon curry powder
    • 1 handful sultanas (optional)
    • 2 tablespoons oil
    • 2 small onions, sliced
    • 1 large tomato, skinned and chopped
    • 1 garlic clove, crushed
    • 350g uncooked shelled king prawns
    • salt and pepper
    • squeeze of lemon juice

    1. Combine the water, coconut, flour, curry powder and sultanas (if using) and let sit 30 minutes.
    2. Heat oil in pan and fry onions until golden, then remove with slotted spoon. Add tomato, garlic, prawns and seasoning, and cook gently for 5 minutes.
    3. Give coconut mixture a good stir and add to pan along with onions. Bring to boil, stirring, then simmer gently about 20 minutes. Stir in lemon juice and serve.


    It is a dry curry but extra water can be added a little at a time if required.
