Combine the water, coconut, flour, curry powder and sultanas (if using) and let sit 30 minutes.
Heat oil in pan and fry onions until golden, then remove with slotted spoon. Add tomato, garlic, prawns and seasoning, and cook gently for 5 minutes.
Give coconut mixture a good stir and add to pan along with onions. Bring to boil, stirring, then simmer gently about 20 minutes. Stir in lemon juice and serve.
Tip
It is a dry curry but extra water can be added a little at a time if required.
