Ingredients

Serves: 4 

  • 120ml extra virgin olive oil
  • 2 tbsp red wine vinegar or lemon juice
  • 1 tsp Dijon or wholegrain mustard
  • 1/2 tsp runny honey or pinch of sugar
  • freshly ground black pepper

Method

  1. Put all the ingredients in a screw-topped jar, put on the lid and shake. This will keep well in the fridge to be used when required. Add crushed garlic, finely chopped stem ginger or chopped fresh herbs, if liked. Shake well before using.
