Creamy garlic and tarragon chicken pasta

My friend who is a chef at a 4* hotel gave me this gorgeous recipe! Great for entertaining guests.

    3 people made this

    • 1 chicken breast per person
    • 1 to 2 tbsp of tarragon
    • 2 tsp of garlic puree
    • Half of small bottle white wine
    • 280ml of double cream
    • Pinch of salt to taste
    • Pepper to taste
    • Pasta
    • 1 large onion
    • Half punnet of mushrooms

    1. Chop chicken breasts into bite sized pieces.
    2. Add chicken to a pan with oil which should be hot. Add uncooked pasta to boiling salted water.
    3. Cook chicken until sealed then add chopped onion and mushrooms. Continue cooking until chicken cooked through.
    4. Add tarragon and garlic purée and fry for further minute
    5. Add white wine and simmer until wine reduced so it just covers chicken and veg in the pan
    6. Add all the double cream and salt and pepper.cook until cream is hot, keep stirring and don't let boil as will curdle! If to runny add corn flour.
    7. Taste! Add more wine or ,salt/pepper at this time
    8. Drain pasta, add to sauce
