Creamy garlic and tarragon chicken pasta
My friend who is a chef at a 4* hotel gave me this gorgeous recipe! Great for entertaining guests.

Ingredients
- 1 chicken breast per person
- 1 to 2 tbsp of tarragon
- 2 tsp of garlic puree
- Half of small bottle white wine
- 280ml of double cream
- Pinch of salt to taste
- Pepper to taste
- Pasta
- 1 large onion
- Half punnet of mushrooms
Method
- Chop chicken breasts into bite sized pieces.
- Add chicken to a pan with oil which should be hot. Add uncooked pasta to boiling salted water.
- Cook chicken until sealed then add chopped onion and mushrooms. Continue cooking until chicken cooked through.
- Add tarragon and garlic purée and fry for further minute
- Add white wine and simmer until wine reduced so it just covers chicken and veg in the pan
- Add all the double cream and salt and pepper.cook until cream is hot,keep stirring and don't let boil as will curdle! If to runny add corn flour.
- Taste! Add more wine or ,salt/pepper at this time
- Drain pasta, add to sauce
- Serve and enjoy!
