Slow cooker chicken tikka masala
This is our family version of chicken tikka masala in the slow cooker. This always comes out very nicely and takes the pressure off when we are entertaining. Serve with rice as part of a larger meal.
Ingredients

- 1 red chilli, seeded and roughly chopped
- 2 cloves garlic, minced
- 3cm piece root ginger, finely chopped
- 3 tablespoons vegetable oil
- 1 pinch ground coriander
- 1 pinch ground cinnamon
- 1 pinch turmeric
- 1/2 teaspoon paprika
- 1 tablespoon garam masala
- 1 teaspoon tomato puree
- juice and zest of 1 lime
- 1 bunch fresh coriander, chopped
- 4 large skineless chicken breast fillets, cubed
- 30g butter
- 2 small onions, roughly chopped
- 1 green pepper, seeded and chopped
- 1 (400g) tin chopped tomatoes
- 85g plain yoghurt
- salt and pepper, to taste

- Preheat the slow cooker to auto or low setting. In a food processor, combine the chillies, garlic, ginger, oil, ground coriander, cinnamon, turmeric, paprika, garam masala, tomato purée and lime zest and juice and half the fresh coriander and pulse until smooth. In a bowl, combine the paste and the chicken breast and mix thoroughly to coat.
- In a frying pan, melt the butter and add the onions and green pepper. Cook and stir for 2 minutes until soft. Transfer to the slow cooker. In the same pan, increase the heat and add the contents of the chicken and paste mixing bowl, and stir continuously for 3 to 4 minutes. Add the tomatoes and bring to a simmer, mixing well to blend the stock and paste. Add the yoghurt and mix well, stirring to a simmer. Season and transfer everything to the slow cooker. Cover and cook on auto or low for 6 to 7 hours or on high for 3 to 4 hours until the chicken is no longer pink in the centre.
- Serve with the remainder of the chopped coriander.

this recipe was awful! bought all the ingredients and followed the recipe very closely. Ended up with a bland, flavourless curry and ended up putting it in the bin. Total waste of time and money! Avoid this recipe at all costs! - 05 Feb 2014

I wouldn't say that this recipe was rubbish or awful, however, it wasn't as spicy as I would have liked. It did have flavour though. JJam, following the recipe closely may have been the mistake you made. If you notice the recipe does not say that the chicken should be left to marinade. No point in marinade and seasoning if you don't allow the meat to absorb it before cooking. - 30 Mar 2015
