Creamy and spicy butternut squash soup

    This perfectly spicy butternut soup is perfect for a cold winter's day to warm you from head to toe.

    Serves: 4 

    • 2 teaspoons oil
    • 1 onion, chopped
    • 1 large butternut squash, peeled and chopped
    • 1 potato, peeled and chopped
    • chicken or vegetable stock, to cover
    • 1/2 fresh red chilli, or to your taste
    • 1 small pot creme fraiche
    • 1/2 teaspoon ground cumin
    • salt and pepper to taste

    1. Place a large saucepan over medium heat. Add the onion and oil and cook till softened. Add the squash and potato and stir well.
    2. Cover the vegetables with either chicken or vegetable stock. Bring to the boil, then reduce heat and leave vegetables to simmer until cooked.
    3. When the veg is cooked add in the chilli then blend until smooth.
    4. Return to the pan add in crème fraiche and cumin. Season to taste.


    This soup is quite spicy so if you prefer a more mild soup reduce chilli and cumin.
