Slow cooker rice pudding
This lovely slow cooker rice pudding is creamy and delicious. Perfect for an easy dessert any night of the week. Serve with a dollop or two of your favourite fruit compote.
Ingredients

- 110g pudding rice
- 1.5L milk
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 55g dark brown sugar

- Preheat the slow cooker to high. In a saucepan, heat the milk and add the spices and sugar. Stir until dissolved. Pour into the slow cooker then add the rice. Cook covered for 3 hours, stirring after each hour.
- Spoon into warm bowls and serve.

Having tried a multiple of slow cooker rice pudding recipes and not finding a good one I was on the point of giving up when I came across this one-it's perfect! No tweaking necessary. The ratio of rice to milk was spot on, as were the timings. It was delicious, beautifully creamy and it is now my go to recipe. Loved it. - 03 Feb 2015
