About this recipe: A make ahead mousse that couldn't be easier to make. Dulce de leche is combined with cream and your favourite garnishes. Served in petite glasses, this makes an excellent addition to a buffet or array of dinner party puds.

  • 500g dulce de leche
  • 450ml whipping cream

  1. Beat together the dulce de leche and whipping cream till thickened and well combined. Cover and chill for at least 12 hours - the longer the better!
  2. Remove from the fridge and whisk till semi-stiff peaks form, ie until the consistency of a mousse is reached.
  3. Spoon or pipe the mixture into shot glasses or small serving glasses. You can garnish the mousse with almost anything you wish, including chopped fresh fruit, crushed biscuits, crushed meringues, chocolate shavings and more!


You can make your own dulce de leche with the recipe available on this site. You can also use tinned caramel, such as Carnation®, which is essentially the exact same thing!
