Delicious carrot muffins

    If you only want to bake a small batch, this recipe makes 6 small muffins. They are dairy-free.

    Makes: 6 

    • 100ml vegetable oil
    • 2 eggs
    • 1 carrot, grated
    • 150g plain flour
    • 1 teaspoon baking powder
    • 1 level teaspoon cinnamon
    • 100g dark brown soft sugar
    • 1/2 teaspoon orange zest

    1. Preheat oven to 180 C / Gas 4.
    2. Put the oil and eggs in a bowl and beat until they take on a custard-like texture and colour.
    3. Add carrot and mix well.
    4. Next, put the flour, baking powder , cinnamon and sugar in a bowl and stir. Add in the carrot mixture and orange zest. Mix well until evenly moistened.
    5. Fill 6 paper cases to about 3/4 with the mixture.
    6. Bake in the oven until a golden brown, about 15 to 20 minutes.
