Put the oil and eggs in a bowl and beat until they take on a custard-like texture and colour.
Add carrot and mix well.
Next, put the flour, baking powder , cinnamon and sugar in a bowl and stir. Add in the carrot mixture and orange zest. Mix well until evenly moistened.
Fill 6 paper cases to about 3/4 with the mixture.
Bake in the oven until a golden brown, about 15 to 20 minutes.
