Dill infused olive oil

    A fantastic way of preserving the wonderful flavours of dill through the seasons. Fabulous with salmon and other fish dishes.

    Makes: 1 600ml bottle dill oil

    • 600ml quality olive oil
    • 1 good handful fresh dill weed

    1. Wash the dill weed well then dry thoroughly to ensure that there is no moisture left on the herb. Gently heat the olive oil in a saucepan over a low heat for a few minutes to warm.
    2. Place the dill weed inside a sterilised bottle and using a funnel, pour over the warmed olive oil and seal immediately.


    Store in a cool dark place, and then once opened store in the fridge. The oil should last for a few months.
