Roasted garlic infused olive oil

    Garlic oil can be a little tricky and over the years I have had good batches and bad batches. I simply put this down to the garlic and where it is in the natural cycle when bottled.

    Makes: 1 600ml bottle roasted garlic oil

    • 600ml quality olive oil
    • 1 bulb fresh garlic
    • juice of 1 lime

    1. Preheat the oven to 190 C / Gas 5. Peel each of the garlic cloves and combine with the olive oil and lime juice in a saucepan and warm gently. Pour the contents of the saucepan into a deep baking tray.
    2. Bake in the oven for 40 minutes then remove from the oven and strain directly into sterilised bottles using a funnel. Seal immediately and store in the fridge. Use within a week.
