Preheat the oven to 190 C / Gas 5. Peel each of the garlic cloves and combine with the olive oil and lime juice in a saucepan and warm gently. Pour the contents of the saucepan into a deep baking tray.
Bake in the oven for 40 minutes then remove from the oven and strain directly into sterilised bottles using a funnel. Seal immediately and store in the fridge. Use within a week.
