About this recipe: Simple delicious recipe that is easy to modify to your taste. Cornbread is not common in the UK so this will be a new treat for many of you. Substitute vegi-mince for a fabulous vegetarian meal.

  • 500g Ground Beef
  • 400g tin Red Kidney Beans (drained and washed)
  • 1 Tablespoon Mild Chilli Powder
  • 1 1/2 Teaspoons Cumin
  • Crushed dried chillies (spicy kick, add to taste)
  • 2 beef bouillon cubes
  • 1 Medium Onion (diced)
  • 3/4 Cup frozen sweet corn or 1 tin of sweetcorn kernels
  • 1 can chopped tomatoes
  • Cornbread batter (omit sugar) See recipe link in Menu Tip below
  • 1 cup grated Cheddar cheese
  • 1/4 cup chopped pickled jalapeños


  1. Fry diced onion in oil until soft, add to large pot
  2. Brown beef in frying pan, drain if not lean before adding to pot
  3. Add chilli powder, crushed chillies, cumin, bouillon cubes, beans, corn,and tomatoes
  4. Simmer over medium heat while preparing cornbread
  5. Make my Johnny Cake batter omitting sugar
  6. Stir cheddar cheese and jalapeños into batter
  7. Pour chilli into 8 inch square baking dish
  8. Cover with cornbread batter
  9. Bake in preheated 200 degree oven for 25 to 30 minutes or until golden brown and a toothpick inserted in middle comes out clean.
  10. Let stand a few minutes before serving
