Fancy lamb burger with Cornish Blue cheese

    This fancy lamb burger takes homemade burgers to the next level. This lamb burger uses good quality British lamb and pairs it with the incredible Cornish Blue cheese, which has a gentle yet rich flavour. Cooked on the barbecue, this lamb burger will result in a succulent patty encasing a melted blue cheese centre which is sure to delight. Cornish Blue cheese is an award winning, traditionally made blue cheese from Cornwall and in 2010 won the 'World Champion Cheese' award in a competition of 26 participating countries. Serve in burger buns with favourite toppings and sauces.

    Makes: 4 fancy lamb burgers

    • 450g lamb mince
    • 2 cloves garlic, minced
    • 1 tablespoon wholegrain mustard
    • 1 tablespoon tomato puree
    • 1/2 teaspoon mint sauce
    • 1 tablespoon chopped fresh parsley
    • salt and pepper, to taste
    • 1/2 red onion, finely chopped
    • 55g breadcrumbs
    • 1 egg, lightly beaten
    • 4 thick slices Cornish Blue cheese

    1. Preheat the barbecue to a medium high heat.
    2. In a bowl, combine all of the ingredients except the Cornish Blue cheese. Mix well with your hands until all ingredients are well blended. Divide the mixture into 4 equal amounts. Carefully place the thick slice of Cornish Blue into the centre of the mixture and form into a patty.
    3. Place on the barbecue and cook for 4 to 6 minutes on each side until cooked to taste. Remove from the barbecue and serve immediately.
