Denhay Mature Cheddar scones with chives

    These incredible scones are wonderful and so very tasty and I feel that this is all thanks to using such a wonderful Cheddar. The Denhay Mature Cheddar is sadly in final production and the cheesery will be closing in 2014 so get this wonderful cheese while it lasts!

    Makes: 12 Cheddar scones with chives

    • 350g plain flour
    • 3 1/2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 pinch paprika
    • 250g Denhay Mature Cheddar cheese
    • 1 egg
    • 2 tablespoons sunflower oil
    • 150ml milk
    • 2 tablespoons chopped fresh chives
    • 12 chive flowers (optional)

    1. Preheat the oven to 180 C / Gas 4. Grease a baking tray.
    2. Sift the flour, baking powder and salt into a large bowl and mix well. Add the paprika and cheese and mix thoroughly.
    3. In a separate bowl, beat together the egg, oil and milk then make a well in the dry ingredients and add the wet ingredients along with the chopped chives. Mix into a dough. If it is too dry add a little more milk, to wet, add a little more flour. Knead for a few minutes then turn out onto a floured board and press until 1cm thick then fold over on top and press down just a little. Cut out using a fluted biscuit cutter to desired scone size.
    4. Bake in the preheated oven for 15 to 20 minutes until risen and golden. Remove from the oven 5 minutes before cooking time is up and press a single chive flower into the top of each scone, return to the oven to finish cooking. Serve warm.


    Substitute with the Wookey Hole Cheddar from Dorset when the Denhay runs out.

    Fantastic way to use fresh chives out of the garden. I divided the recipe in half, omitted the egg and added a bit more milk. So delicious!  -  23 Apr 2017
