Potted Colston Bassett Stilton with chocolate biscuits

About this recipe: A slightly eccentric recipe, but trust me, totally delicious. The Colston Bassett Stilton is a perfectly balanced cheese for this dish as its mould flavour is not too overpowering, yet the mild flavour is definitely present giving it that depth and complexity of flavours which work nicely with the chocolate digestives. Serve as a dessert.

Ingredients

Serves: 2 

  • 110g Colston Bassett Stilton
  • 55g mascarpone cheese
  • 75g unsalted butter
  • 1/2 teaspoon salt
  • chocolate digestive biscuits, as needed

Method

Prep:10min  ›  Extra time:1hr setting  ›  Ready in:1hr10min 

  1. Combine the Stilton, Mascarpone, butter and salt into a food processor and blend until smooth. Place into ramekin dishes and chill in the fridge for 1 hour to set.
  2. Remove from the fridge and serve with chocolate biscuits.
