Italian style bread

    One of the most popular savoury bread recipes! This recipe requires ingredients to be added part way through the programme. Whenever heavier ingredients are called for, such as chopped nuts or dried fruit, it is best to add these part way through the second kneading step. The reason for this is because we want these ingredients to retain their shape and to distribute evenly throughout the loaf. If we added these ingredients at the start, the powerful kneading action of the machine would chop them into tiny pieces and force them to the bottom of the dough!

    Makes: 1 loaf bread

    • 310ml water
    • 560g strong white flour
    • 1 teaspoon salt
    • 2 tablespoons dried milk powder (optional)
    • 3 tablespoons olive oil
    • 2 tablespoons sugar
    • 2 teaspoons dried basil
    • 2 teaspoons dried oregano
    • 3 tablespoons tomato puree
    • 7g dried active baking yeast
    • 2 to 4 tablespoons sliced olives

    1. Place all ingredients, except for the olives, into the bread machine. Start the machine, using the normal programme. When the machine beeps, add the olives and continue the programme.
