Apple Layer Cake


    This is a basic sponge mixture, with the added layer of bramley apples which makes the sponge moist and delicious.

    • 6oz self raising flour
    • 6oz butter
    • 6oz caster sugar
    • 3 eggs
    • 1 tsp baking powder
    • 2 large bramley apples
    • a little cinnamon


    1. Put the flour, butter, sugar and baking powder in a bowl and mix together.
    2. Add the eggs and beat using an electric hand whisk until light and fluffy.
    3. Add cinnamon, to taste, into the sponge mix.
    4. Preheat the oven to 180C, and then grease and line a sponge tin.
    5. Peel the apples. Cut into segments, by cutting the apple into quarters and then core. Slice each quarter thinly.
    6. Put a layer of apple onto the sponge, and sprinkle with cinnamon, and then top the apples with the rest of the sponge mixture.
    7. Bake in the oven for 30-35 mins until the sponge is golden brown and springs back when touched.


    If you want to, you can add grated apple into the sponge mixture, and mix in. This makes the sponge moist.

    A really nice moist but light cake. I did the tip of putting some grated apple in the cake mix. I also used ginger rather than cinnamon, but I bet it would have been just as good. I found it took 40-45 minutes in an 8 inch cake tin.  -  29 Oct 2014
