If you want to, you can add grated apple into the sponge mixture, and mix in. This makes the sponge moist.
A really nice moist but light cake. I did the tip of putting some grated apple in the cake mix. I also used ginger rather than cinnamon, but I bet it would have been just as good. I found it took 40-45 minutes in an 8 inch cake tin. - 29 Oct 2014
