Apple layer cake

    This is a basic sponge mixture, with the added layer of bramley apples which makes the sponge moist and delicious.

    Serves: 8 

    • 180g (6 oz) self raising flour
    • 180g (6 oz) butter
    • 180g (6 oz) caster sugar
    • 1 teaspoon baking powder
    • 3 eggs
    • 2 large bramley apples
    • 1 pinch cinnamon, to taste

    1. Preheat the oven to 180 C / Gas 4. Grease and line a cake tin.
    2. Put the flour, butter, sugar and baking powder in a bowl and mix together.
    3. Add the eggs and beat using an electric mixer until light and fluffy. Add cinnamon to taste.
    4. Tip half of the sponge in the tin. Put a layer of apple on top and sprinkle with cinnamon. Then top the apples with the rest of the sponge mixture.
    5. Peel the apples. Cut into segments by cutting the apple into quarters and then core. Slice each quarter thinly.
    6. Bake in the oven until the sponge is golden brown and springs back when touched, about 30 to 35 minutes.


    If you want to, you can add grated apple into the sponge mixture, and mix in. This makes the sponge moist.

    A really nice moist but light cake. I did the tip of putting some grated apple in the cake mix. I also used ginger rather than cinnamon, but I bet it would have been just as good. I found it took 40-45 minutes in an 8 inch cake tin.  -  29 Oct 2014
