About this recipe: This lovely Christmas cake is simple in its ingredients yet super tasty and just perfect for topping off a fabulous Christmas day. Enjoy!


Serves: 6 

  • 55g butter
  • 225g demerara sugar
  • 4 large eggs, lightly beaten
  • 1/2 teaspoon bicarbonate of soda
  • 1 teaspoon baking powder
  • 225g plain flour
  • 1/2 teaspoon salt
  • juice of 1 lemon
  • 450g mixed dried fruit
  • 110g mixed nuts, roughly chopped
  • 300ml orange vodka
  • 150ml cold tea

  1. In a mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time and beat until well mixed. Add the bicarb, baking powder, flour, salt, lemon juice, fruit, nuts, orange vodka and tea. Mix well and allow to rest for 3 hours.
  2. Preheat the oven to 190 C / Gas 5 and grease a loose bottomed cake tin.
  3. Transfer the mixture to the prepared cake tin and smooth the top.
  4. Bake the cake in the oven for 30 to 40 minutes until a skewer inserted into the centre comes out clean. Remove from the oven, cool then serve.
