Quick Cajun sausages

About this recipe: I like the taste of Cajun spices and this recipe means you decide how spicy you or your family like it. You will need a large frying pan for this.

Serves: 4 

  • oil or butter for frying
  • 2 medium onions, roughly chopped
  • 8 to 10 sausages (any flavour, even veggie ones are good)
  • 2 (400g) tins chopped tomatoes
  • 2 (400g) tins baked beans
  • 1 to 2 teaspoons Cajun spice mix

  1. Fry the onions over a medium heat until they are just soft and translucent and put aside.
  2. Fry the sausages over a medium heat until they are brown.
  3. Cut the sausages into either 3 or 4 roughly equal pieces and add the onions. Open all the cans and add the contents to the sausages. Sprinkle the 1 teaspoon of Cajun spice mix over the top and stir it all together.
  4. Bring the mixture to the boil and turn down to a simmer for a couple of minutes, taste and add more Cajun spice mix to your own taste.
  5. Simmer for a further quarter of an hour, stirring occasionally to keep it from sticking to the base of the pan
  6. Serve with chunks of crusty bread.


For the grown ups, serve with cold beer. Enjoy!!!
