1 to 2 teaspoons Cajun spice mix

Fry the onions over a medium heat until they are just soft and translucent and put aside.
Fry the sausages over a medium heat until they are brown.
Cut the sausages into either 3 or 4 roughly equal pieces and add the onions. Open all the cans and add the contents to the sausages. Sprinkle the 1 teaspoon of Cajun spice mix over the top and stir it all together.
Bring the mixture to the boil and turn down to a simmer for a couple of minutes, taste and add more Cajun spice mix to your own taste.
Simmer for a further quarter of an hour, stirring occasionally to keep it from sticking to the base of the pan
