Sift SR flour into bowl and a pinch of salt
add Castor sugar
add Margarine and rub into flour and sugar with fingertips until resembles breadcrumbs. Do not mix for long time be as quick as possible the least you handle the mix the better add cherries or other fruit mix .
break egg in the milk and mix ,add a little at a time to the mixture, till it forms into a dough that is not to wet , you do not need to use all the liquid ,
when it is a dough roll out on floured board so it is about 4cm thick and use cutters to cut into scones .
put on baking tray and brush tops with the remaining egg and milk mix
place in preheated 200 C gas 5 oven for 10 15 minutes till golden and inside is cooked . Makes about 8 to 10 depending on size
when scones are done hey should have a natural break line that is though middle of scone ,when scones are cool cut and fill with cream and strawberries, or eat with just butter ,or jam.
