Cod in a lemon parsley butter

    This lovely dish is light, full of flavour and just perfect served with seasonal vegetables or a nice crisp salad.

    Serves: 4 

    • 2 tablespoons olive oil
    • 4 cod fillets, skin on
    • salt and pepper, to taste
    • 55g salted butter
    • the juice of 3 lemons
    • 4 tablespoons capers
    • 4 tablespoons fresh flat leaf parsley, chopped
    • 120ml creme fraiche
    • 2 tablespoons chopped fresh chives

    1. Preheat the oven to 180 C / Gas 4.
    2. Heat the olive oil in an ovenproof cast iron frying pan over a medium heat. Rub the cod with salt and pepper then place in the frying pan, skin down. Cook for 4 minutes.
    3. Transfer the pan to the oven and bake for 10 to 15 minutes until the fish is an even white colour throughout. Remove from the oven and place the fish on warm plates.
    4. Add the butter to the pan along with the lemon juice, capers, crème fraiche and herbs. Heat through then spoon over the fish. Season and serve immediately.

    This was lovely. The fish took on the buttery flavor enhanced by the salty capers. My only change was to substitute minced sweet onion in place of the chives and add golden cherry tomatoes. I served it over angel hair pasta and the sauce was perfect. Thank you, AToft!  -  16 Feb 2015
