Slow cooker creamy rice pudding

    This is my homemade slow cooker recipe for rice pudding. It's lovely and creamy, low fat too. You wouldn't know it's make with skimmed milk. You can make it with any milk. My slow cooker is 1.5 litres. I find this serves 4 in these little glass bowls. It takes just under 4 hours on high to cook. It's delicious hot or cold. I hope you enjoy making this.

    Serves: 4 

    • 110g (4 oz) pudding rice
    • 25g (1 oz) granulated sugar
    • 25g (1 oz) margarine or butter
    • 1.2L (2 pt) milk
    • ground cinnamon, nutmeg, vanilla extract (optional)

    Prep:5min  ›  Cook:4hr  ›  Ready in:4hr5min 

    1. Grease the slow cooker, then add all the ingredients and give it a good stir. Set on high and cook for 3 1/2 to 4 hours, stirring halfway through cooking.

    This is a delicious rice pudding. So easy to make, I dont make it any other way now, tastes so much better in slow cooker. I have made it with full fat and semi skimmed milk, added some single cream and also evaporated milk, each time it was yummy. Alwzys double the quanities, cooking for six, also nice cold next day, I put leftovers in small tuperware pots for lunches. Totally foolproof!! Thanks for recipe  -  11 Apr 2014
