With all the concern about the effects of sugar these days, I have begun using stevia in many of my sweet dishes. This lovely autumn slow cooker apple sauce is incredibly easy to make and very delicious.

Ingredients
Serves: 8
1 sprig fresh stevia leaves
350ml boiling water
6 apples - peeled, cored and diced finely
juice of 1/2 lemon

Steep the stevia leaves in the boiling water for 90 minutes, then remove the leaves and strain if necessary.
Preheat the slow cooker to high. Bring the stevia infused water to the boil then pour into the slow cooker. Add the diced apples and lemon juice. Cover.
Cook the apple sauce on high for 3 to 4 hours until the apples are well broken down and mushy. Blend with a hand held blender if you want a smoother sauce. Serve warm or cold.
