About this recipe:Goat's cheese and pears are a flavour combination match made in heaven. This is such a wonderfully versatile dish that can be plated as individual portions or served as a 'help yourself nibble' during pre dinner cocktails.
For the salad
1 (140g) packet rocket leaves
3 large conference pears, cored and thinly sliced
450g goat's cheese
220g dried cranberries
220g toasted walnuts
For the dressing
2 tablespoons Dijon mustard
2 tablespoons honey
3 tablespoons white wine vinegar
7 tablespoons vegetable oil
salt and pepper, to taste

For the salad:
Divide the rocket leaves between six starter plates. Arrange the sliced pears in a pleasing way on top of the rocket. Crumble the goat's cheese on top. Sprinkle a few dried cranberries and some walnuts on each plate.
For the dressing:
Combine all of the ingredients for the dressing into a screw top jar and shake vigorously for 1 minute. Drizzle over each salad. Serve.
