About this recipe: Goat's cheese and pears are a flavour combination match made in heaven. This is such a wonderfully versatile dish that can be plated as individual portions or served as a 'help yourself nibble' during pre dinner cocktails.


Serves: 6 

  • For the salad
  • 1 (140g) packet rocket leaves
  • 3 large conference pears, cored and thinly sliced
  • 450g goat's cheese
  • 220g dried cranberries
  • 220g toasted walnuts
  • For the dressing
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 3 tablespoons white wine vinegar
  • 7 tablespoons vegetable oil
  • salt and pepper, to taste

    For the salad:

  1. Divide the rocket leaves between six starter plates. Arrange the sliced pears in a pleasing way on top of the rocket. Crumble the goat's cheese on top. Sprinkle a few dried cranberries and some walnuts on each plate.
  2. For the dressing:

  3. Combine all of the ingredients for the dressing into a screw top jar and shake vigorously for 1 minute. Drizzle over each salad. Serve.
