This lovely pea, apple and mint soup is a really lovely way to enjoy fresh apples and peas. Feel free to substitute the petit pois for other varieties of shelling peas.

The recipe was easy to follow & didn't require too much fuss (which is always a good thing!). The resulting soup is quite sweet, so seasoning is definitely needed to balance that out a bit. I added a little salt & plenty of black pepper.  -  11 Jul 2015
