About this recipe:This lovely pea, apple and mint soup is a really lovely way to enjoy fresh apples and peas. Feel free to substitute the petit pois for other varieties of shelling peas.
2 onions, finely chopped
4 apples - peeled, cored and sliced
450g petit pois
600ml vegetable stock
2 good handfuls fresh mint leaves
salt and pepper, to taste

In a saucepan over a medium heat, melt the butter and add the onions. Cook and stir for a few minutes until soft, then add the apple and peas. Toss to coat in the oil then add the stock, half the mint leaves and season. Cover and simmer gently for 40 minutes.
Remove from the heat, add the remainder of the mint and blend using a hand held liquidiser. Serve in hot bowls.
The recipe was easy to follow & didn't require too much fuss (which is always a good thing!). The resulting soup is quite sweet, so seasoning is definitely needed to balance that out a bit. I added a little salt & plenty of black pepper. - 11 Jul 2015
