Goat's cheese and cranberry filo parcels

    These lovely Capricorn goat's cheese filo parcels are simply divine and the perfect fancy party nibble.

    Serves: 8 

    • 2 sheets filo pastry
    • 25g butter, melted
    • 8 teaspoons cranberry sauce
    • 200g Capricorn goat's cheese

    1. Preheat the oven to 200 C / Gas 6. Grease a baking tray.
    2. Spread out the pastry and brush with the melted butter. Cut into 15cm squares then layer one square on top of another to make a star. Repeat until all pastry is used up. In the centre of each star add a little cranberry sauce then divide the goat's cheese between the parcels. Draw up the corners and pinch to create an open basket.
    3. Bake in the preheated oven for 5 to 8 minutes until the filo pastry is golden brown.
