Cuban fish with avocado in citrus marinade

    A citrus marinade with herb overtones is perfect for marrying the flavours of a snapper or grouper with nutritional avocado.

    • 1 tablespoon olive oil
    • 1 large onion, finely chopped
    • 4 snapper fillets
    • 2 avocado, peeled and diced (about 2 cups)
    • 2 tablespoons Baron Green Seasoning
    • 2 hard boiled eggs, chopped

    1. Heat oil in a pan and fry onions until translucent. Add fish fillets and fry until cooked through.
    2. In a separate bowl, combine avocado and Baron Green Seasoning. Mash avocado until thoroughly combined. Then gently fold in the hard boiled eggs. Pour over fish and serve.
