Cuban Fish with Avocado and Baron's Green Seasoning

    A Citrus marinade with herby overtones is perfect for marrying the flavours of a snapper or grouper with nutritional avocado.

    • 1 tablespoon olive oil
    • 2 tablespoons Baron's Green Seasoning (Available through Cuban Cuisine UK)
    • 1 large onion finely chopped
    • 4 snapper fillets
    • 2 cups avocado
    • 2 hard boiled eggs


    1. Saute' the snapper in oil after frying onions until translucent.
    2. In a separate bowl, combine, avocado and Baron's Green Seasoning. Mash avocado until thoroughly combined. Then gently fold in the hard boiled eggs, chopped.
    3. Pour over fish and serve....
