Grown up hot lemonade

    A slightly alcoholic winter warmer guaranteed to keep you toasty. In addition to the ginger and cinnamon, you could also add some allspice berries and whole cloves.

    • 4L pure apple juice
    • 2L water
    • 12 lemons, juiced
    • 2/3 bottle good rum
    • 3 tablespoons honey
    • 2 thumb-sized pieces root ginger, chopped
    • 1 cinnamon stick
    • 1 lemon, sliced

    1. Pour apple juice into a large deep pot, and simmer for 20 minutes.
    2. Add water, lemon juice, rum, honey, ginger, cinnamon and lemon slices.
    3. Leave to simmer for as long as possible to allow the flavours to infuse.
    4. Strain to remove the ginger. Reserve the lemon slices to put back in. Keep it warm on a very low heat, and serve.
