Perfect lemon drizzle cake

    This is a perfect all in one recipe that you can't get wrong! One bowl is all you need. Delicious served with raspberries.

    Makes: 1 loaf cake

    • 140g (5 oz) self-raising flour
    • 1 teaspoon baking powder
    • 110g (4 oz) soft margarine
    • 2 eggs
    • 110g (4 oz) caster sugar
    • 1 tablespoon lemon curd
    • 1/2 lemon, zested and juiced

    1. Preheat oven to 180 C / Gas 4. Grease and flour a loaf tin. Place all ingredients in a mixing bowl.
    2. Beat well until smooth and mixed, but be careful not to over-beat as this will knock the air out.
    3. Place in loaf tin and bake for 50 to 60 minutes, or till golden brown.
