First we make our homemade chocolate, better 1 day in advance so it can become rock hard. Mix the milk powder, sweetener and the cocoa powder in a bowl. On very low heat melt the Copha® and slowly it over the dry mixture. Once smooth, pour it over greaseproof paper in a tin. Place it in the fridge until hard.
Once the chocolate is hard you can prepare the cookie. Preheat the oven to 180 C / Gas 4. Mix the sweetener powder with the butter. Once there is a nice creamy mixture add the flour, baking powder, the salt, the two eggs, vanilla and porridge oats. Mix all very well. Then finally chop the chocolate into bits, smaller or bigger as you please, and mix it with the cookie mixture.
Shape the cookies with a spoon and place on a parchment-lined baking tray.
Bake cookies in the preheated oven till golden and set, about 10 to 12 minutes.
