About this recipe: My housemate is on weight-watchers and as it is nearing the blustery wintery weather I thought it was time to get the old slow cooker out and my get my creativity on! I am an avid fan of spicy foods, not to mention I love being healthy. For those on weight watchers this hearty supper serves 6 and is only 7 POINTS! Full nutritional info at the bottom... hope you enjoy. The starch in the pasta should thicken the stew up but if you like a really thick stew add a little cornflour. Also if you prefer a firecracker stew add more chilli.

Serves: 4 

  • olive oil, as needed
  • 200g chopped red onions
  • 2 medium red chillies, chopped
  • 100g chopped chorizo sausage
  • 1 teaspoon hot chilli powder
  • 200g chopped carrots
  • a few thyme sprigs
  • 3 skinless chicken breast fillets
  • 200ml low cal white wine (Black Tower B® wine is good)
  • 500ml low salt chicken stock
  • 50g dried pasta shells

Prep:15min  ›  Cook:6hr  ›  Ready in:6hr15min 

  1. Heat a drizzle of oil in a large frying pan; add the onions, chopped chillies, chorizo, chilli powder, carrots and thyme. Fry for 4 to 5 minutes.
  2. Whilst the onions and chorizo are frying, dice the chicken breast and place into the slow cooker. Cover with the wine and stock.
  3. Once onions are soft and chorizo crisp, transfer the contents of the frying pan to the slow cooker. Mix well.
  4. Place on a low setting and slow cook for 6 hours. In the last 30 minutes, add the pasta and cook till tender.


If you like your stew spicier add chilli to your taste. I love bonnet chillies myself. Same goes for making it thicker or thinner.

Lovely recipe. At first I wasn't sure it would be enough for 4 servings but once it was dished out and served with crusty bread it was lovely and plentiful. Will be making again. - 03 Jul 2015
