Chicken bhuna

    This gorgeous chicken bhuna recipe is packed with flavour and tastes just like what they serve at our local Indian. Stunning in every way, enjoy with rice.

    Serves: 4 

    • 2 tablespoons olive oil
    • 4 small onions, finely chopped
    • 6 cloves garlic, minced
    • 1 (4cm) piece root ginger, minced
    • 2 teaspoons curry paste
    • 2 green chillies, seeded and chopped
    • 600g skinless chicken breasts, cut into 3cm cubes
    • 3 tomatoes, chopped
    • 1 teaspoon ground turmeric
    • 2 teaspoons ground coriander
    • 2 teaspoons chilli powder
    • 2 teaspoons ground cumin
    • juice of 1/2 lemon
    • 1 1/2 teaspoons salt
    • pepper, to taste
    • 150g natural yoghurt
    • fresh corainder leaves, chopped

    1. Heat the olive oil in a large non-stick pan over a medium heat. Add the onion, garlic, ginger, curry paste and green chillies and cook and stir for 5 minutes until soft. Add the chicken and brown on all sides. Add the tomatoes, spices, lemon juice and seasoning. Cook for 15 to 20 minutes at a gentle simmer until the chicken is no longer pink in the centre.
    2. To serve, stir in the yoghurt and garnish with the fresh coriander leaves. Serve immediately.

    This was one of the best Bhuna's I've made (& I've made a few). It was flavoursome without being too hot - even the kids ate it. I did substitute the 3 tomatoes for tinned tomatoes and added a teaspoon of ground coriander but otherwise no changes. Will definitely make this again!  -  07 Jan 2017
