This is a really quick and easy recipe for grilled mackerel fillets. Just pop the mackerel under the grill for a few minute and hey presto, dinner is ready!

Ingredients
Serves: 4
4 ready to cook mackerel fillets
olive oil, to taste
chopped fresh thyme, to taste
salt and pepper, to taste
Method Prep:5min › Cook:15min › Ready in:20min
Generously rub the mackerel fillets with the olive oil, thyme and seasoning. Line a shallow roasting pan with tin foil and lay a rack on top. Arrange the fish on the rack.
Grill for 6 to 8 minutes on each side until the mackerel flesh is an even colour throughout. Serve hot or cold.
