This is a tasty and versatile side dish for a variety of evening meals. Perfect with meat and fish dishes or just by itself with a crisp salad.

1 tablespoon olive oil
1 onion, finely chopped
1 small red chilli, seeded and minced
2 cloves garlic, minced
110g smoky bacon, chopped
200g red lentils
450ml vegetable stock
salt and pepper, to taste
250g grated Cheddar cheese
6 slices Brie cheese

Preheat the oven to 180 C / Gas 4. Grease an ovenproof baking dish.
Heat the oil in a frying pan over a medium heat. Add the onion, chilli and garlic and cook and stir for 5 minutes until soft. Add the bacon and cook until brown. Add the lentils and the stock and bring to the boil. Season well then lower the heat then simmer gently for 10 to 15 minutes until the lentils are tender and the stock has been absorbed. Add the cheese and stir to mix. Spoon into the prepared baking dish and lay the sliced brie on top.
Bake in the preheated oven for 15 to 20 minutes until the top is golden and the Brie has melted.
